Center Principal

  • Director: Muyi Cai

    Born in December 1962, professor level senior engineer, doctoral supervisor, president of China National Research Institute of Food and Fermentation Industries, acquired with the government special allowance, and is selected to be one leading talent of One Hundred Leading Talents for Technological Beijing in 2013. He Graduated from Fermentation Engineering speciality of Food Engineering Department of Tianjin University of Science and Technology in 1984 and has been engaged in the research of protein modification technology and industrialization of related products for many years. Up to now, he has taken on and completed 5 national new product development projects, and 3 provincial and ministerial scientific research projects, and has obtained 10 China national invention patents, accepted 7 China national invention patents, compiled 1 monograph and published dozens of scientific papers. Research field contains: 1) Research of protein modification technology by using biotechnology; 2) Research and industrial preparation of food-origin oligopeptides; 3) Research and transformation of the production technology of traditional fermented food by using biotechnology. The research results have a wide range of applications in the relevant industries.

  • Deputy Director: Ruizeng Gu

    Professor level senior engineer, deputy director of Research & Development Department of Industrialized Functional Peptide, and has participated in major national science and technology projects and key industrial projects many times. He completed research and industrial development of marine fish peptide, soy peptide, albumen peptide, whey peptide, oyster peptide and corn peptide, and has rich experience in project hosting and management.

  • Assistant Director: Jun Lu

    Joint training doctor of Chiba University, visiting doctor of The University of Tokyo, deputy director of Research & Development Department of Industrialized Functional Peptide, and is in charge of basic research on food-origin functional peptides. He has participated in multiple projects such as “863”, “the 12th Five-Year Plan”, Special Fund for Technology Development Research Supported by the Scientific Research Institutions, Key Program for Import of Brainpower Supported by the State Administration of Foreign Experts Affairs, and has rich experience in project hosting and scientific research.
